Summer time on the lake

I am missing summer more and more! The snow was starting to melt here, but yesterday and last night the snow came back and it's cold again! I'm ready for summer so hopefully it'll start warming up soon! Here are some fun pictures from the lake last summer.




This morning I was told I have the memory of a goldfish... I am not too pleased with that idea, but I'm afraid it might be true.. I'm going to start looking for things to sharpen my memory!

Vacation Days!

This week I took Thursday and Friday off for vacation days! I've been working ALOT and doing alot of OT so these days were MUCH needed! I've been staying up late watching the Olympics and got in some doctor apts. Today I slept in until NOON and it felt fabulous! Kevin and I took Kahlua out to play in the snow and Kevin built a snowman!! The snow is Kahlua's most favorite thing in the world!!! Here are pics of our fun snow day!

Perfect! Now he's complete!You can't really see the snowman's arms... but he has some! I don't think Kevin realized he could ZOOM in to see me better in the picture!! OH WELL!!! Fun times!!! When we took a walk we passed some guys putting siding up on a house and one of them yelled "that thing has more fur than my sheep at home!!! HAHAHA I'm sure it's true though because I know I vaccum up ALOT of dog hair alll week!
I had Kahlua pose with our wooden deer out front. Kevin's dad came over one weekend and brought this lovely deer with him. He makes them and sells them and they're super cute, but I'm not quite sure what we'll do with it once the snow melts!

The other night I helped my sister pack up some boxes into her car. She's moving to Texas in a few weeks. Of course Kahlua needed to help by watching us and laying beside the new boxes in the living room!



Cookie Dough Truffles attempt #1










So I'm a HUGE fan of Annies Eats food blog! She recently posted about Cookie Dough Truffles and I KNEW I was going to have to make some and try them out myself. I made a few mistakes along the way, but feel they turned out pretty well. I made the dough up the night before and left it in the fridge 24 hours. When I went to make them the next day I will admit the dough was a bit tough to handle. Next time I will make sure I only leave them in the fridge a few hours and then start making up the dough balls. Here are the dough balls before their chocolate dip!
Next I melted both semi sweet and unsweetened chocolate and placed in a bowl over simmering water. Kevin came through the kitchen around this time and asked if I was 'making fondue'. In a way I guess I was fonduing cookie balls!! Here is a picture of them after their dip in the chocolate. YUMMY!! I placed mini chocolate chips on top for a cute decoration as recommended by Annie!
Next came the hard part... waiting for them to dry! While they were drying I decided I didn't want to waste the leftover chocolate and started dipping pretzels in the chocolate and putting them aside to dry. I didn't have too many chocolate dipped pretzels, but enough to put in some snack bags to take to work through the week! Finally here is my finished product!
